There are peppers and eggplants still hanging on in some summer gardens. Sweet potatoes are ready to be dug or are already curing in a warm sheltered spot. We thought we would furnish some inspiration for using your late summer vegetables.

Don’t know what to do with all your peppers? Poblano and Aji Dulce peppers as well as others will continue to produce until they freeze. We’ve pickled Aji Dulces this year They are great for a snack, with sandwiches, or stuffed with cheese. We also provided a recipe for Sofrito, a Caribbean seasoning base which uses Aji Dulces , in a previous post. Another option is stuffed poblanos, different than the traditional Chiles Rellenos which calls for Poblanos. Links to a few recipes are provided below. Enjoy the last of your summer vegetables. Greens from your fall garden should already be producing or on the horizon.
